Birds

Spring Quail ($18.00 per pack of 10/ Halal & HPB 'Healthy Choice' certified)
Delicious and tender, these premium quails are ideal for most styles of cooking. A lean meat, quail is a great subsitute for chicken as it contains far less fat despite its similar taste. A single pack weighs approximately 0.8-1kg and comes frozen for optimal freshness.

Old Quail ($8.50 per pack)
Mature versions of the previous item on the menu, 'old quails' are recommended for herbal soups, stocks, stews, congees and curries. A single pack weights approximately 400-500g and comes frozen for optimal freshness.

Large French Coturnix Quail ($25.00 per pack of 5)
The French Coturnix quail is twice the size and weight of the Spring Quail. Its meat is just as tender as that of its cousins, but is particularly recommended for larger families, roasting, grilling or baking due to its larger size. A single pack weighs approximately 0.8-1kg and comes frozen for optimal freshness.

Jumbo French Coturnix quail ($8.00 per quail)
The extra large French Coturnix is thrice the size and weight of the Spring Quail. Each quail weighs between 235-270g and comes frozen for optimal freshness.

Pigeon Squab ($28.00 per bird - temporarily out of stock)
Highly popular in Hong Kong and in traditional French and English cuisine, the squab is wonderful in a variety of culinary methods. This squab is the baby pigeon, which is very popular in Hong Kong for roasting and herbal soup. Pigeon offers a tender and more flavoursome alternative to duck. Reservations must be made in advance as they are stocked to order. Each squab weights about 300g and comes frozen for optimal freshness.

Guinea Fowl ($58.80 per fowl)
A smaller cousin of the turkey hailing from Africa, the Guinea fowl is also known as 'Pearl Chicken' in Mandarin. It is famed for the sweetness of its meat and makes for delicious soups and roasts. Each fowl weights approximately 1-1.3kg and comes frozen for optimal freshness.

Free-Range Chicken (Kampong Chicken) ($15.80 per chicken)                                                                                                                                                         A popular ingredient for soups due to its sweeter, less oily meat and firmer texture, the free-range chickens available at the shop are genuine 'kampong' chickens - they are imported from an AVA-approved farm in Malaysia but are slaughtered in Singapore to guarantee freshness. Each chicken weighs approximately 1.1-1.3kg.

Spring Free-Range Chicken (Kampong Chicken) ($8.80 per chicken)
Smaller versions of the previous item on the menu. Each chicken weighs approximately 0.9-1.1kg.

Herbal Kampong Chicken ($10.50 per chicken)
Tender and tasty, all this pre-cooked chicken requires is a quick steam or microwave. A nutritious, restaurant-standard treat without the restaurant-standard price tag! Each chicken weighs about 1kg.

Old Chicken ($8 per chicken)
Locally-farmed, these mature hens allegedly cure rheumatism when boiled with lemongrass, old ginger and onions. Whether you are seeking traditional Chinese remedies or otherwise, these chickens are heavenly with herbal soup recipes and curries as they are exceptionally well-marbled with fat. Each chicken weighs about 1.2-1.5kg and comes frozen for optimal freshness.

Muscovy Duck ($26.00/kg - temporarily out of stock)
A leaner, meatier variety of duck, the Muscovy is good for stews and soups. Each duck weighs approximately 3 to 3.5Kg and comes frozen for optimal freshness.

Goose ($15.00/kg)
A Chinese delicacy when roasted or stewed, our geese are specially imported from Taiwan. Each goose weighs at least 3kg. Advance orders are required as stock is extremely limited. *An additional roasting service is available at a small cost of $25 per goose, and requires a minimum notice of four days

Exotic Meats

Crocodile ($9.50 per pack of 250gm)
Premium crocodile meat sourced from local farms can be used in soups or stir-fries and are widely believed to benefit skin conditions and asthmatics. Each pack weighs 250g and comes frozen for optimal freshness.  

Crocodile Meat on Bone ($28.80 per kg)
An economical alternative for the making of soups. Delicious with Bak Kut Teh and Sweet and Sour Ribs recipes. Each pack weighs 400-800g and is frozen for optimal freshness.

Crocodile, Whole Leg (28.80 per kg)
Available in two sizes - the smaller front leg, and the larger back leg. Exceptionally delectable when roasted, or as an ingredient in soups or curries. Sold according to weight and frozen for optimal freshness.

Turkey Drumstick (from the USA) ($12.00 per kg - temporarily out of stock)
Only the tender-est part of the turkey is sold here. The drumstick is of a far more suitable size for the average Singaporean family. Each drumstick weighs about 1kg and is frozen for optimal freshness.

Venison Steaks (from New Zealand) ($39 per kg)
For the uninitiated, venison is deer meat. A tender, flavourful alternative to beef, our venison steaks are sold in small vacuum packs and according to weight. The steaks are frozen for optimal freshness.

Rabbit (from the USA) ($45 per kg)
Tastes and looks just like chicken, except infinitely more tender! It is often stewed or pan-fried in French and Maltese cuisine. Sold according to weight and frozen for optimal freshness.

Wild Boar (from the USA) ($50 per kg)
The legs and ribs make for unbeatable roasts, stir-fries and barbeques! Sold in packs of 2-3kg and comes frozen for optimal freshness.

Local, Farm-Fresh Eggs

Quail Eggs ($1.80 per pack of 15 eggs, or $5.00 per tub of 50 eggs)
Flavoursome and containing a mere fifth of the cholesterol present in chicken eggs, these fresh eggs can be kept up to a month in a chilled environment.

Jumbo Quail Eggs ($0.50 per egg)                                                                                                            Extra-large quail eggs for those craving more bite! Approximately the size of a pigeon's egg.

Pigeon Egg ($8.00 per egg)
A rare and exclusive treat! Pigeon eggs are made up of a small yellow yolk suspended in a translucent white that is best described as having a clear, gelatinous quality. They are incredibly aromatic and are lovely when served simply boiled without any additional condiments. Reservations should be made in advance as each pair of birds lays a maximum of 2 eggs a month.

Guinea Fowl Egg ($1.00 per egg)
Slightly smaller and more exquisitely-shaped than a chicken egg, the Guinea Fowl egg is prized for its mouth-watering flavour. Its flavour is best appreciated hard-boiled, without any additional condiments. Like the pigeon egg, Lian Wah Hang is the exclusive retailer of such eggs and advance orders are required.

Local, farm-fresh eggs. Can be kept for up to a month in a chilled environment.

Collected from the hens daily - freshness guaranteed.

Chicken White Egg, Jumbo Grade ($3.90 per pack of 10 eggs)
Large eggs from local farms that are almost the size of duck eggs.

Chicken Egg, First Born ($2.00 per pack of 10 eggs)
Eggs of young hens that contain less cholesterol and more protein. Recommended for half-boiled eggs.

Chicken Egg, Black Chicken ($3.70 per pack of 10 eggs)
Eggs of the Silky White or as locally known, the Black chicken. These eggs are freshly collected from Lian Wah Hang's own farms.

Century Egg (Ready to Eat) (50 cents per egg)                                                                                                                                                                          These pre-cleaned and vacuum-packed century eggs produced from duck eggs are very convenient as they are ready to be cooked/consumed without the usual preparatory mess.
